1 red bell pepper cut into thin strips
1 green bell pepper cut into thin strips
1 medium red onion cut into thin strips
2 cloves of garlic coarsely chopped
3 cups of cannellini or navy beans rinsed and drained
¼ cup olive oil
1 Tbs. Italian seasoning
2 eggs
1 cup bread crumbs
1 tbs. Worcestershire
2 cups canned marinara sauce – warmed in microwave
sliced provolone cheese
½ cup shredded parmesan cheese
favorite sub buns


In a non stick skillet add 2 tbs. vegetable oil and sauté the peppers and onions until tender and caramelized.

Using food processor puree garlic, beans, olive oil, Italian seasoning, eggs, bread crumbs, Worcestershire, patty the curd mixture into sausage shaped logs and brown on all sides until cooked through. Place the bean patty that is browned in a sub bun top with peppers and onions, drizzled generously with warm marinara, finish with the provolone and parmesan cheese.
