INGREDIENTS:
3 ea apples
1 cup sugar
½ cup butter (cubes)
1 sheet puff pastry
PROCEDURE:
Peel and core apples then cut in half and set aside
Cook sugar on med to high heat until sugar dissolves to a caramel color
Immediately add the butter and stir until it is emulsified with the caramel
Pour the caramel into a baking dish to cover the bottom
Place the apples, outside faced down, into the caramel
Sprinkle cinnamon and sugar on the apples and bake @ 350 for 10-15 min
Brush puff pastry with egg wash and sprinkle with cinnamon sugar then cut into discs and place on top of the apples and bake at 375 for about 10 min or until the puff pastry is golden brown
Cool for about 5 min then flip the apples out onto a sheet pan
