1 cup Sugar
2 2/3 cup Dessicated Coconut
2 Tbsp Light Corn Syrup
1/2 tsp Vanilla Extract
1/4 tsp Salt
1/3 cup Egg Whites

1) Preheat oven to 350 F (if convection oven, 300)
2) combine all ingredients in large bowl
3) Mix ingredients together with hands or a spoon
4) Using a tablespoon, scoop into 1 1/2" balls
5) Arrange coconut balls on a baking pan lined with parchment paper
6) Flatten balls slightly with palm of hand
7) Bake 12 min, turning pan halfway through baking time


To make dessicated coconut:

1) Preheat oven to 250 F
2) place unsweetened coconut flakes on a sheet pan in a thin layer
3) bake coconut flakes 5-10 minutes (using care not to brown) - check frequently
4) place coconut in a food processor and shred to smaller pieces
