1 can 25% less sodium SPAM
1 round loaf Hawaiian bread
6 eggs
4 tablespoons sugar
4 tablespoons pineapple juice
1 teaspoon ground ginger
Oil for frying
1 can crushed pineapple, drained, for serving

Cut SPAM horizontally into 8 slices.  Cut Hawaiian bread into quarters and then cut two 1" slices from each quarter.  Take a small serrated knife and cut a pocket into each slice of Hawaiian bread by inserting knife at cut end of bread and gently working your way to the edges.  Insert SPAM slices into the bread pockets; trim any over hanging SPAM.

Heat oil in a large frying pan or skillet.  Preheat oven to 350 degrees.  Whisk together eggs, sugar, pineapple juice, and ginger.  Dip bread slices in egg mixture so both sides are coated and place on plate to allow time for mixture to soak into bread.  Once all bread is dipped, start frying in small batches.  Fry until edges turn dark, then move to cooling rack.  Once all bread is fried, place entire cooling rack on a cookie sheet and bake for 15 minutes.  If you prefer a "soggier"  French toast you can skip this step.

Serve with crushed pineapple.

Makes 4 servings; two slices per serving.
