Dressing
1/4 cup balsamic vinegar
1 garlic clove, minced
2 tablespoons honey
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 cup olive oil
2 tablespoons of dijon mustard
Spinach Salad
10 ounces fresh spinach - rinsed, dried and torn into bite-size pieces
One tomato diced
1/4 red onions diced
3 tablespoons of raisins
2.5 oz of walnuts
2 0z of blue cheese
In a medium bowl, whisk together all the salad ingredients. Pour dressing over salad, and toss.
Refrigerate 10 to 15 minutes before serving.
