From pizza to tacos to subs and sliders, food trucks are a growing trend in Indianapolis. Now, a new truck is eyeing the competition.
Heather Banter is the brains behind Circle City Spuds.
“The spud concept is just taking a nice, big spud and filling it with something yummy,” said Banter.
From the Brickyard BBQ spud to taco-themed ones, Heather said the sky is the limit for her business and her menu. With sliders, soups and cupcakes, she is focused on offering a quality option for diners.
It has been a long and winding road to get to this point though. Heather spent years running a successful remodeling business. Then the hardships hit in 2008, an illness, coupled with the down economy, left her with nothing.
“I didn't have a dollar in my checking account,” said Heather. “But lucky, I had some angel investors and some nice friends who have been able to support my dream.”
Those angel investors, made up of close friends and family, gave her what she needed to build her business. From investing both time and money, to helping build her truck from scratch, Heather is thankful for the help, saying, “Without them, they couldn't have done it.”
As she finishes the long journey, Heather serves up one last tip for anyone thinking about chasing a dream.
“Yes, it's scary, but it's supposed to be scary,” she begins. “It's not fun unless it's scary. So just jump in. Don't be scared.”

I would not eat a food that was touched by bare hands as I saw in this clip. THe #1 rule to prevent foodborne illness is to NEVER touch ready to eat food with bare hands ( when she squished the potato).
